There are two raw ingredients for chocolate which are both derived from the cocoa bean - cocoa solids, which is basically what we know as cocoa, and cocoa butter which is the colourless oil extracted from the pods. White chocolate contains cocoa butter, but no cocoa solids. Milk and dark chocolate contains both cocoa solids to varying levels and cocoa butter - also other vegetable oils. The better quality the cocolate, the higher the proportions of coca solids and cocoa butter.
